Apple Phirni





Ingredients:

Apple - 2 large sized
Basmati Rice - 1/2 cup, soaked in water for an hour
Milk - 4 cups
Sugar - 1 cup
Cinnamon powder - 1/2 teaspoon
Rose Essence - 3 to 4 drops
Salt - a pinch
Ghee/Clarified Butter - 1 teaspoon
Cashew Nuts - 10, roasted in ghee
Raisins - 10, roasted in ghee
A few Saffron strands soaked in 2 tablespoons of hot milk


Method:

  1. Peel apples and cut into small pieces.
  2. Roast cashew nuts and raisins with 1 teaspoon ghee. Keep aside.
  3. Drain out all the water from rice, and blend it into a coarse powder. The rice grains should be broken down into small granules, the size of semolina/rava. The granules will be a little wet. Do not add water. 
  4. Cook the apple pieces in 1/2 cup water and 1/2 cup of sugar. Cook until soft. Mash the cooked apple little bit, still retaining chunky pieces and not pulpy.
  5. Take 1/4 cup of milk, mix the rice granules. Keep aside.
  6. Take remaining milk in a large, thick bottomed vessel and bring it to boil.
  7. Add 1/4 cup of milk mixed with rice powder and cook it on medium flame, stirring frequently to avoid charring. If the vessel is not thick at the bottom, chances are high that a charred layer forms at the bottom. Ensure there is no lump formed when you add rice granule mixture. Cook until the rice granules are soft but still firm and hold shape, al dente. The milk will now start thickening.
  8. Add cinnamon powder, rose essence and sugar continue cooking for 5-10 minutes on medium flame.
  9. Add cooked apple pieces and a pinch of salt, cook for low flame 10 minutes.
  10. Add roasted cashew nuts, raisins and saffron milk.
  11. Let it cool to room temperature.
  12. Refrigerate for atleast 7-8 hours or overnight and serve chilled.

Ellu Bella

On Sankranti day, people in Karnataka share Ellu Bella with family and friends.This ritual is called Ellu Birodu.


Ingredients:


Sesame Seeds - 1 tbsp
Groundnuts - 1/2 cup
Fried Gram (Putaani Dal) - 1/2 cup
Jaggery - 1/2 cup
Copra (Dried Coconut) - 1/2 cup
Round Sugar Candy - 1/2 cup

Method:

  1. Sun dry jaggery and copra for an hour. This makes it easy to cut them into uniform shaped pieces.
  2. Dry roast groundnuts and de-skin them and break them into halves. Let it cool.
  3. Dry roast sesame seeds util they stop spluttering. Let it cool.
  4. Cut sun dried copra and jaggery into small squares of uniform size.
  5. Mix halved groundnuts, fried gram, semame seeds, copra pieces, jaggery pieces and round sugar candies.

Veg Pizza



Ingredients:

Pizza base - 1
Mozzarella Cheese - 75gms, grated
Baby Corn Cob - 1
Tomato - 1 small, cut into pieces
Capsicum - 1 small, deseeded and cut into pieces
Onion - 1 small, peeled and cut into pieces
Green Chilli - 1 small, cut into small pieces

Method:

  1. Place pizza base on a pizza tray.
  2. Spread the mozzarella cheese evenly all over the pizza base.
  3. Spread the vegetable pieces over the cheese layer and press it slightly so that the cheese and vegetables stay firm.
  4. Microwave the pizza at 600W, 220 degrees centigrade for 5 mins.
  5. Cut into wedges and serve hot with tomato sauce, oregano and chilli flakes.

Lemon Rice


Ingredients:


Sona Massori Rice - 2 cups
Lemon Juice - 4 tbsps
Turmeric Powder - 1/2 tsp
Green Chillies - 5, slit
Mustard Seeds - 2 tsps
Black Gram - 2 tsps
Bengal Gram - 2 tsps
Ground Nuts - 1/4 cup
Curry Leaves - 8
Dry Red Chillies - 4,cut into pieces
Asafoetida - a pinch
Oil - 5 tbsps
Salt to taste
Coriander Leaves - for garnishing


Method:

  1. Cook rice with salt till the grains are still separate.
  2. Spread the rice on a plate and let it cool.
  3. In a heavy bottomed pan, heat oil and saute ground nuts.
  4. When the groundnuts turn slightly brown, add mustard seeds, black gram, bengal gram, red chillies, curry leaves and asafoetida.
  5. Add slit green chillies.
  6. When mustard starts to splutter, add turmeric powder.
  7. Now add cooked rice and mix well.
  8. Turn off the heat and add lemon juice and mix well.
  9. Add more salt if required and mix well.
  10. Garnish with coriander leaves and serve.

Choco Bite


Ingredients:

Chocolate - 250gms
Parle-G Biscuit - 20
Oats - 1/2 cup
Milk - 2 tbsps
Cashew nuts - 10, broken into pieces
Raisins - 10, cut into halves
Cadbury Gems - 20

Method:

  1. Blend Parle-G biscuits into fine powder.
  2. Heat milk a heavy bottomed pan.
  3. Add chocolate and let it melt on low flame.
  4. In another pan, roast oats till they become crisp.
  5. To the molten chocotate, add cashew, raisins, powdered biscuit and roasted oats.
  6. Mix well.
  7. Divide this dough into 20 equal postions.
  8. Make roundels of each portion and flatten them slightly.
  9. Place a Cadbury Gems on each flattened Choco Bite. Repeat this for all the remaining portions.
  10. Place in an air-tight container and refrigerate.
  11. Serve refrigerated.
